The Ulitmate Football Dip

When watching a stressful football game, like the one we had on Sunday, it is nice to have a snack to feed the frustrated people. In Ree Drummonds book The Pioneer Woman Cooks: A Year of Holidays, she had a great eight layer bean dip for a football game party.

The recipe was:
6 Roma tomatoes, diced
1/2 large onion, diced
1 jalapeno, seeded and diced
Large handful cilantro, chopped
1 1/2 limes
salt to taste
2 avocados, pitted, peeled and diced
One 16 ounce can refried beans
2 tablespoons of taco seasoning
1 cup of sour cream
3/4 cup grated Monterey Jack cheese
3/4 cup grated sharp cheddar cheese
1 cup sliced black olives

First off you had to make the Pico de Gallo, which was just the tomatoes, onion, jalapeno and cilantro (Drummond 42). I didn't put the jalapeno in since I wanted to make sure everyone could eat the dip at the party. The squeeze 1 lime into the bowl and add salt, then stir it all together and you have the Pico de Gallo made. Then I added the diced avocado into a separate bowl. After I did that I "stirred 1/2 the Pico de Gallo. You just made chunky guacamole!" (Drummond 43).

After I made the chunky guacamole, I put the refried beans into a bowl and added the taco seasoning. You wanted to "stir it around until the seasoning is totally mixed with the beans." (Drummond 43). You want to really make sure the taco seasoning it mixed together because you don't want to have unstirred in spices. After I stirred the beans and spices together I put it in a 9x13 pan. Drummond said to put it on a platter but since I was going somewhere else I thought it would travel better (Drummond 43).

Once I spread the beans I added dollops of  sour cream onto the beans. Adding the dollops make it easier to spread it around over the beans. (Drummond 43).  After that it was easy, you added the grated cheese, chunky guacamole, olives and then the Pico de Gallo. A trick to add more freshness was " to squeeze the juice of half a lime all over the top" (Drummond 44).

Overall this dip was pretty simple, so anyone could do it. The down side is that you have to make it an hour before serving because of the guacamole, so you can be in somewhat of a time crunch that way. A trick that you could also do is "make individual dips by layering all the ingredients in small, clear disposable glasses. Less mess." (Drummond 44). I served it with chips and it was a hit at the party! I will definitely be making it for super bowl Sunday!
