Chocolate-Peanut Butter Icebox Cake



Growing up with the family I have, I get to try new and unique foods all the time. Also since I love baking this gives me chance to try new things. In my book Cakes by Martha Stewart there's an icebox recipe with my two favorite things: chocolate and peanut butter. I have never made an icebox cake before but there's always a first time for everything. In her book Martha said; "you'll be surprised at how soft and sliceable the cookies become as they meld with the cream" (Stewart 196). This helped me to believe the cake shouldn't be too difficult to make.


 Ingredients:
2 cups heavy cream, well chilled
1/3 cup confectioners' sugar
1/3 cup smooth natural-style peanut butter (not unsalted)
1 box (9 ounces) chocolate wafer cookies

The first step is whisk 1 1/2 cups of cream with the confectioners' sugar until soft peaks form. In another bowl whisk the peanut butter until soft and smooth; this I did not do and I do not think it made much of a difference. Whisk in remaining cream and then mix in the peanut butter.



To assemble the cake put a little dab of the mix on the bottom of 7 cookies: 6 cookies in a circle and 1 in the middle. On top of those cookies spread about 2/3 cup of the mixture over the cookies leaving a slight border. Repeat this to form 5 more layers (you can stagger the layers or just go right on top of each other). You will end with the cream layer and for more decoration cut three wafer cookies in half and top them so they make a design (Stewart 196).

Refrigerate the cake for at least 8 hours (or overnight).  *Sorry the toothpick smudges from covering it don't make it that attractive.

New recipes are always interesting to make because you never know if some things are necessary or not. Baking is always a trial and error and that makes it that more fun.
